Flavours Lausanne is more than just a café—it’s the dream come true of Valérie, a passionate pastry chef with Swiss and Vietnamese roots. After studying business and marketing at the University of St. Gallen and building an international career at Nespresso, Valérie decided in 2024 to follow her true calling: creating a space where coffee and pastry come together in harmony.

Her journey has been shaped by both expertise and passion. In 2019, she won first place at the amateur pastry competition Cook’n’show in Geneva. Two years later, she launched her Instagram page BakedByVal, sharing her creative recipes and inspiring a growing community. Alongside her full-time career, she deepened her knowledge with a CAS in Coffee Expertise at ZHAW in Zürich—proof of how central coffee is to her world.

At Flavours Lausanne, you’ll start your day with fresh, healthy salads, then treat yourself to homemade pastries, custom-designed cakes, and locally roasted specialty coffee crafted by Shirin in Etoy. Each detail reflects Valérie’s unique mix of marketing finesse, international perspective, and artisanal creativity.

The café, nestled in the heart of Lausanne Sous-Gare, offers a warm, cozy atmosphere where every visit feels like home. Beyond daily delights, Flavours also hosts monthly bento cake workshops and will soon propose tailor-made classes for special occasions—inviting guests not only to taste but also to create.
